Boerewors rolls with tomato smoor

The king of the braai: boerewors cooked over coals, in a soft roll with a sweet tomato and onion smoor.

Ingredients

Method

  1. Make the smoor: soften the onion in oil for 10 minutes, then add the tomato, sugar and chilli and simmer for 15 minutes.
  2. Braai the boerewors over medium coals for 12 to 15 minutes, turning often. Do not prick it.
  3. Toast the rolls on the edge of the grid for the last minute.
  4. Cut the wors to fit, tuck it into the rolls and spoon the smoor over.
Butcher's tip

Medium coals, not fierce ones: wors that cooks too fast splits and dries out.
